Work Remote Breakfast Recipes That Inspire Productivity

"Remote work" is a term a lot of us are becoming familiar with lately, while others have been plugged-in off-site for quite some time!

Nevertheless, we understand daily life for a lot of us may look different for a little bit as we open up our laptops and work from our living rooms! But, some things don't have to change - and that's adding sweetness into your day with berries.

To me, food is comfort, it's peace, it's sometimes exciting and new, or refreshing and sweet, or spicy and fun! While working from home does mean discipline and routine, I hope to inspire energy, excitement and productivity with EASY recipes that can fuel you all day long. For me, these four recipes do just the trick!

I don't care if it's a Sunday morning or a random Wednesday before work, sometimes, you just have to start the day with some flap jacks! I love getting creative with pancake recipes - there are SO many variations out there even for the pickiest of eaters, or those that require dietary alternatives (I'm right there with you!)

That's why I love these Gluten Free Blueberry Pancakes. For a lot of us remote-workers, we already have ingredients stocked up like milk, sugar, salt, flour, baking soda, eggs, butter...you get the point. All household staples that are generally in the pantry already, which makes pancakes so easy to whip up on a whim. 

Even if you're working remotely for the first time, use the time you would've spent on your commute to make these for the family!

What I like to do with fresh berries is consume them quick (because well, I can't help myself!) and store the rest in my freezer for last minute baking recipes or smoothies. Admittedly, I'll even snack on my leftover frozen blueberries throughout the day, but they also work perfectly for a blueberry pancake recipe like this. A simple hack for added protein and energy is to add one cup of your favorite protein powder into the mix!

Any other smoothie-lovers out there like me? I'm a morning and post-workout smoothie gal, I really love any opportunity for a frosty, fresh cold smoothie and love the energy it gives me. Sometimes when I'm in a pinch and have an early morning conference call I have to prep for, I'll throw together a few nutrient packed ingredients into the blender and call it a day. Sometimes, simplicity is key and especially when it tastes as good as this Blueberry Yum Yum Smoothie. There's something almost festive about this smoothie, even though it's definitely a year-round recipe. I love the addition of the dates, cinnamon and vanilla that make it feel like fall - added with the freshness of juicy blueberries and protein packed greek yogurt. I personally like to incorporate vanilla yogurt into this smoothie blend, but you can use whatever flavor you'd like!

This smoothie get's me through my morning meetings and through lunch with no cravings or growling tummy! If you have time in the mornings (unlike me, typically!) this is also a fun one to make with the kiddos as well.

I don't know about you, but nothing - and I mean nothing beats a classic muffin in the morning. I'll whip up a batch of these Raspberry Poppyseed Banana Bread Muffins over the weekend and have them already good-to-go for the week ahead if I'm feeling extra lazy in the morning, and just want my breakfast ready-to-eat to save me time for other tasks at hand!

The best part about this easy recipe is the fact that you can add so many different tasty twists to the muffin batter - don't have poppyseed? No problem - maybe add flax, or chia, or add in some seasonings like cinnamon. ANY berry adds the sweetest addition to this recipe too. While I love raspberries, if I only have strawberries or blueberries on hand, for example, these would work perfectly too. Berries add beautiful texture, moisture and sweetness to any baked dish, and these are no exception!

Last but not least, this Raspberry Banana Oatmeal Boost got its name for a reason! It's quick and full of power-house nutrients sure to boost your work day with energy. Have instant oats lying around the house? Some fresh or frozen berries in the refrigerator? Any other fruits like bananas, maybe even peaches or apples depending on the season? Nuts or seeds? Well, you're already more than halfway there then! Oatmeal is such a hearty breakfast staple and so easy to dress up with seasonal fruits and sweet superstars like berries!
