The Great American Eclipse is occurring this Monday, August 21st   and it will last from 11:40 AM CDT – 2:39 PM CDT. The next one of these won’t be coming to North America for another 7 years, so that seems like a cause to celebrate! Sweet, darkly colored blackberries are the perfect fruit to celebrate the occasion and we’ve found amazing recipes to enjoy this weekend or Monday for the end-of-summer eclipse.

Outta-This-World Brunch

Start your weekend with galaxy blackberry French toast! Prep your French toast the night before and wake up to a delicious blackberry infused treat. Plus you can bring this dish to work on Monday to share with all of your coworkers while you watch the eclipse. 

Interstellar Happy Hour

Kick off happy hour with an easy and refreshing dark side of the moon blackberry Moscow mule and a blackberry and goast cheese sunburst crostini. They're SO good! Sip on your chilled mules while the kiddos run around with vanilla wafers covered in Oreos and easy-to-grab moon pies. 

DIY Eclipse Crafts Table

Solar eclipse crafts for kids are the perfect way to keep your kiddos entertained. All you need is construction paper, chalk, pre-cut circles and tape. Everyone will leave with their own solar eclipse creation as their party favor.
