I am so excited for fall fashion, lattes and everything pumpkin spice, but I’m not ready to say goodbye to sunny Sunday brunches. Before the warmth of summer turns to crisp fall, we’re squeezing in as many breakfast dates as we can. We love discovering new brunch spots, but there’s something so special about staying in and cooking breakfast at home. This past weekend we discovered the most incredible, refreshing summer drink. A fresh herb berry cocktail with juicy strawberries, muddled mint and lemon vodka topped with our favorite champagne!

This fresh herb berry cocktail is without a doubt my new go-to brunch drink. Crisp mint paired with fresh lemon and sweet berries marry in a refreshing cocktail that's perfect for toasting goodbye to summer. Fresh herbs are the biggest trend in cocktails right now- basil, mint, even rosemary are sprucing up drinks in restaurants everywhere. We have a little herb garden growing at our house, and I like to think the love that goes into caring for it makes this drink taste even better :)

Ingredients

  • 6 California Giant strawberries, stems removed and halved

  • 2 oz lemon vodka

  • 8 mint leaves

  • 1 oz lemon juice

  • 2 oz simple syrup

  • ¼ cup champagne

Instructions

  • In a shaker, muddle all ingredients VERY WELL except for champagne

  • Add ice and shake

  • Strain over ice and top with ½ cup champagne
