Easy Berry Brownie Cake

You know those people that can whip up a homemade, beautiful, Pinterest-worthy dessert, and they say “oh, it was so easy.” Are you rolling your eyes yet? My mother is the epitome of that person. Everything she bakes is homemade and looks like absolute perfection. It also takes her half a day to prepare said dessert. But when you are almost nine months pregnant and get invited to a last minute party (like me), you just don’t have the time or energy to be Martha Stewart.

Looking for an easy hack, I started thinking of my favorite desserts. I love brownies. I love cream cheese frosting. And I love berries. Why not combine the three? And to make it even easier, use a box of brownie mix (because no one will ever know!). I made the frosting, which only takes a few minutes. And I topped it off with all of my favorite berries. What do ya think? I guarantee guests will think you worked in the kitchen all day.

Ingredients

1 lb California Giant strawberries

6 oz California Giant blackberries

6 oz California Giant blueberries

Box of brownie mix

Favorite frosting (I used the recipe below)

Cream cheese frosting

4 oz cream cheese, softened

1/8 cup butter, softened

Dash of salt

1/4 teaspoon vanilla

2 cups powdered sugar

Instructions 

Prepare brownies in an 8”x8” baking dish. Let cool. Prepare frosting by combining all ingredients and beat until smooth. Frost brownie. Top with all berries.
