Summer Salsas, Dips, Spreads and Schmears

I love a great gathering with friends, and nothing invites impromptu get-togethers quite like summer does. Whether it’s around the pool or in someone’s back yard, food is almost always the center piece. Of course, nobody goes to a party empty handed. When you are short on time, a fresh platter of berries and your favorite store -bought dip are a welcome addition to any summer soiree. If you’re looking for something more diverse or creative, try one of these recipes for salsas, dips, spreads and schmears.

For a fresher, healthier take on traditional chips and salsa, try Strawberry Salsa or Strawberry Pepper Salsa. Serve in avocado halves or on celery sticks, or make your own tortilla chips. Spray tortillas with olive oil and top with your favorite seasonings. Cut each tortilla into eight triangles and bake at 375 degrees until they reach your preferred level of crisp.

Dips

I love the simplicity and ease of this Triple Berry Fruit Dip from Tastes of Lizzy T. She recommends pairing it with pie crust shapes, vanilla wafers, pretzels or fruit. I, on the other hand, might be tempted to eat it as a frozen treat. I mean, one woman’s dip can be another woman’s ice cream, right? The Cucumber Blueberry Dip from our recipe library is another simple option which packs the perfect amount of cool with a little less sweet.

Spreads and Schmears

Fresh Strawberry Jam is the perfect spread for summer brunches or even for your kids’ jam sandwiches, poolside. I haven’t tried variations on this recipe yet, but I can see myself experimenting with blueberries, blackberries, raspberries (or a combination) instead of strawberries. To turn this jam into a schmear for bagels or muffins, combine one part jam with two parts plain cream cheese and mix to your desired consistency.

Don't forget to pass the Blackberry Butter.  To make this heavenly spread, use a spatula to combine two sticks of softened butter, one tablespoon confectioners sugar, and a 6 oz. clamshell of blackberries together in a large bowl.  When combined, you can fill a ramekin with the butter mixture or preserve the butter in a freeezer appropriate bag for up to six months. Use it to pump up the flavor on toast, muffins, pancakes and even grilled cheese sandwiches!
