Pumpkin + Blackberry Cake Bars

What on earth is a pumpkin and blackberry cake bar? Is it a cake? Is it a bar? Whelp, it’s both and it’s to-die-for. My roommate in college used to make these “Neiman Marcus” bars and I can’t even begin to describe how delicious they were. The crust was a thick cake-like crust that took up half the bar, topped with this creamy and sweet topping that made it even more divine. I had no self control when she baked these things, and nor will you with my pumpkin and blackberry version!

When given the task to make something extraordinary using pumpkin and blackberries, I immediately thought, could I turn those Neiman Marcus bars into a pumpkin and berry version? Yes. Yes, I did. The recipe is based off of using a boxed cake mix, but not making it like you normally would. You just mix the base with melted butter and eggs to make a “cake crust”. Then, whip together this creamy custard base, which I flavored with pumpkin and of course, pumpkin spice, and baked it right on top of the crust. The result is a creamy and chewy bar that will be devoured before another batch can be made. So, I would probably make 2 batches, duh.


Serves 12 large bars


For pumpkin pie layer:

2 eggs

8 oz cream cheese, softened

1 cup pumpkin puree

1 box powdered sugar (1 lb)

2 T pumpkin spice (or can use just cinnamon if you don’t have)


For cake layer:

1 stick butter, melted

1 box vanilla cake

2 eggs

40 blueberries



Preheat oven to 350 degrees.

In a large mixing bowl, mix together butter, cake mix, blueberries, and eggs until well incorporated. Spray pan with nonstick spray. Press cake mixture into bottom of pan.

In a large mixing bowl, whisk together all pumpkin pie layer ingredients. Pour mixture over top of cake mixture. Bake for 40 minutes or until COMPLETELY set. Let cool completely before cutting into bars. Can dust with powdered sugar and/or ground cinnamon! Enjoy!
