Goin' Fishing: Recipes for the Lenten Season

I don't know about the rest of you, but I've been having a LOT of fish lately. The season of Lent is in full swing and my household hasn't had this much fish since our camping trip last summer! But I've been really excited to come home and create different ways of cooking fish with fresh ingredients for my family. 

Here are a couple of our favorite fish finds to go "off the hook" with for your last few Lent meals of the year:

Pan Seared Snapper with Blueberry Chimichurri

This pan seared recipe is oFISHally the perfect Lent recipe! Just mix up the chimichurri, add jalapenos, fish and top with berries. Voila - an easy yet protein-packed meal sure to keep every tummy satisfied!

Berry & Watermelon Skewers

No, there's no fish in this recipe. BUT having the same protein (fish, fish fish) consistently means that you have to be creative with the side items on the plate. Freshen up the menu with these fun fruit skewers! Not only do they add a pop of color, they also provide a sweet contrast to the flaky, crispy fish in the pan.

Hear me out on this one - switch out the chicken with fish and you have a tasty dinner the entire family will enjoy! Fish tacos are an easy-to-make meal that provides different levels of flavor with each ingredient.
