Recipes to Enjoy During Gluten-Free Awareness Month

A few years ago, my son-in-law learned he's allergic to gluten. This meant that my daughter and our entire family needed to find food options for him that we could all enjoy! So I rolled up my sleeves, put on my chef's hat, and went to work on making the same family favorites with a gluten-free twist. So if anyone knows how hard it is to transition a pantry/household into a gluten-free one, I do. 

Don't think that going gluten-free means the end of your sweet tooth! While it can be hard to navigate this new lifestyle, there are some easy tips and tricks for ensuring that dessert always comes first.

In honor of Gluten-Free Awareness Month, I'm sharing some easy, classic recipes that are gluten-free and still delicious!

Gluten-Free Blueberry Pancakes

Waking up to the smell of fresh blueberry pancakes and warm maple syrup is what sweet dreams are made of... Not only are these an all-time classic breakfast, but these pancakes are also customizable to any berry preference! No plate tug of war necessary. 

Gluten-Free Blackberry & Lemon Cheese Cupcakes

Is anyone else guilty of licking the icing first before biting into the cupcake? I'll raise my hand to being a frosting fanatic! My inner pastry chef glowed whenever I made these bite-sized treats at home. Tip: To make the hydrangea style frosting design, use a Wilton tip #1M to frost "stars" on cupcakes, starting on the outside and working your way in.

You can't ever go wrong with cookies. Though there is a slight difference in texture with gluten-free mixes, it's not as big or dramatic as people make it seem. (I'll admit that I was one of them before..) Trust me, bring these to a bake sale or birthday party and no one will know the difference.
