Blueberry Kiwi Mojito

St. Patrick's Day is tomorrow (yay!) and just in case you're not feelin' a green beer, I threw together this green mojito. Not only is it festive for the upcoming holiday, but it's full of fresh blueberries and kiwis. If you haven't combined these two fruits before, you are 100% missing out. The sweet blueberries pair perfectly with the tangy kiwis and they taste even better when combined in a cocktail! Plus, there's no added sugar - just about a tablespoon of honey is all you need!

*You can also make a mocktail version of this mojito by using club soda instead of the rum. Enjoy!

Ingredients:

1/4 cup California Giant blueberries

2 kiwis, peeled

1 tbsp honey

1 lime

1 sprig of mint

2 ounces of rum

Club soda

Crushed ice

Instructions:

In a food processor, combine kiwis, honey and juice from half of the lime. Combine and set aside.

In the bottom of your glass, muddle half of the blueberries with three mint leaves. Pour kiwi mixture on top. Add crushed ice, rum and club soda to your liking.  Top with remaining blueberries, mint and a wedge of lime.
