7 Green Recipes for St. Patrick's Day

St. Patrick's Day is upon us, and I don't know about you...but I've more than once forgotten to wear green. That being said, my meals often include fresh greens — so that counts, right? Here are seven green recipes to ensure a pinch-free St. Patrick's Day:


Strawberry Farro Salad with Balsamic Glazed Pecans: Hot, cold, sweet, savory, crunchy, creamy...this salad hits every flavor profile, texture, and temperature. 


Blueberry Panzanella Lettuce Cups: As if the lettuce "cups" didn't show off enough green, the garnish of fresh tarragon will add a pop of green to each bite, too.


Fresh Berry Arugula and Almond Salad: The sweetness of the berries pairs beautifully with the peppery arugula. This salad is easy to switch around, too. Try it with strawberries, blueberries, or a mix of the two—it'll be scrumptious either way. 


White Chocolate Strawberries with Coconut and Lime: These dipped berries have the perfect amount of green, provided by the little "kiss" of lime zest. Mmmm.


Blueberry and Gorgonzola Salad with Mixed Greens: This salad not only provides the greens your body needs (especially on St. Patrick's Day), but the blueberries are JAM-PACKED with rich antioxidants.
