Naked Berry Cake (Kristin's Wedding Update)

I've been gathering all sorts of wedding inspiration lately, and today begins the one year countdown to the big day! I have all the "business" portion of the wedding down —booking vendors, photographer, videographer,etc.— which means now is time for the fun part: testing the wedding cake!

One of the major decor aspects of our wedding is berries. Right now, I really love the purple hue and texture of blackberries. A huge trend I'm seeing all over the wedding blogosphere are "naked" wedding cakes. They're simple, rustic, and absolutely gorgeous. The best way to decorate "naked" cakes are with fresh ingredients (instead of layers of frosting or fondant). I whipped up my own version with California Giant blackberries mixed with figs from my parents' farm. The whole process took under an hour (I baked the cakes the day before), and it was even easier than I anticipated.

Here's how to make this simple and beautiful cake:

Ingredients

-2 Boxes of cake mix (or homemade)
-3 Different size cake pans
-Butter cream frosting (I used this recipe from Ina Garten)
-Six 6oz clamshells of California Giant blackberries
-Handful of figs and rosemary for decoration









Directions

Step 1 – Prepare cake mix according to directions. Distribute evenly between three pans. Once done baking, freeze in the pan for at least one hour. Carefully release the cake from the pan, and then use a serrated bread knife to cut the cake in half lengthwise. You will now have 6 layers of cake.
Step 2 – Prepare icing according to directions.
Step 3 – Wash the blackberries thoroughly. Using a (level) cake stand, dab a little frosting on the bottom of the stand, then place the largest layer of cake on top. Spread frosting only on the top and very edge of the cake. Place an even layer of blackberries on top of the frosting (I used a 6oz clamshell on each layer).
Step 4 – Repeat step 3 until you have used every layer, from largest to smallest.
Step 5 – Use figs, rosemary and more blackberries to garnish.
