Fast & Simple Blueberry Brownies

I am really getting into baking, but sometimes I just need a quick and easy recipe. So in honor of blueberry baking bliss, I found a simple recipe for blueberry brownies. These were surprisingly fast and easy to bake, and I already had all of the ingredients on hand. These brownies are absolutely delicious, especially served right out of the oven, a la mode. The blueberries burst in your mouth with every bite. Enjoy!
PS – The chocolate chips are optional. But I’m a chocolate lover and used 60% cocoa Ghirardelli chocolate chips. I definitely think they made the brownies more decadent.

Blueberry Brownies
Adapted from Elizabeth Olson
Yields 1 8x8 baking dish
-1/2 cup butter, melted (vegetable/olive oil may also be substituted)
-1 cup white sugar
-1/2 tablespoon vanilla extract
-2 eggs
-3/4 cup all-purpose flour
-1/2 cup unsweetened cocoa powder
-1 teaspoon cinnamon
-1/2 teaspoon salt
-1 cup California Giant blueberries
-1/2 cup chocolate chips (optional)

  1. Preheat oven to 350 degrees F. Lightly grease an 8x8 baking dish.
  2. In a medium bowl, whisk together the melted butter, sugar, and vanilla.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. In a small bowl, sift together the flour, cocoa powder, cinnamon, and salt. Slowly stir the flour mixture into the rest of the batter until well blended.
  5. Stir in the blueberries and chocolate chips.
  6. Spread the batter evenly into the prepared baking dish. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Do not overcook!

Spread some Holiday cheer this season by topping these already scrumptious brownies with Santa Hats! Perfect to bring to parties or serve at your own - no one will be able to stop talking about how cute they are!
1. Cut the heads off of Strawberries so that the flat part will be able to stand on top of the brownie.
2. Draw a circle with white icing on top of each brownie slightly larger than the widest part of the strawberry.
3. Place the flat part of the strawberry onto each icing ring on the brownies and push down gently to keep it in place.
4. Top the tip of the strawberry with a round blob of icing and voila!
